Breakfast Casserole Recipes

We recently had Miss Elsie’s blessing. It was beautiful and we had all of our family there to support us. It was absolutely lovely. We also had all of our family over for a little brunch. We made breakfast casserole, bagels, fruit & juice. Here are the recipes for the breakfast casseroles. I’m going to be honest, I only got a picture of one of the recipes because the other was a total FAIL. I tried it in the crockpot & with fresh potatoes and it didn’t quite work out (gag!) But when my father-in-law makes it, it is DElish.

BREAKFAST CASSEROLE (pictured) 1 - 1 1/2 lbs. sausage (Hillshire Farms--Polska Keilbasa is best) 6 slices bread w/out crust (Cheap white Sandwich bread is best) 2 cups grated cheese 6 eggs 2 1/4 cup Milk 3 T. Dry Mustard (optional) 1 can Cream of Mushroom Soup 1/2 cup Mayo Vegetables if desired (I saute yellow or green peppers, mushrooms to get out some of the water, I have added fresh tomatoes, sun-dried tomatoes, green onions, zucchini (sauted), spinach and all have been good) Butter 9X13 Pan, Brown Sausage, Arrange 6 slices of bread in bottom of pan, top with cooked sausage and vegetables, then add grated cheese. Stir eggs and add other ingredients to egg mixture and pour over casserole. Refrigerate overnight!! Bake 1 hour (until golden and cooked in center--I sometimes cook an extra 15-20 min.) at 375 degrees.   BREAKFAST CASSEROLE WITH POTATOES -32 oz frozen hash browns -1 C butter -2 C shredded jack cheese -2 C cheddar cheese -2 C bacon or cooked sausage -1 can evaporated milk -6 eggs -1 can green chilies *Spray 9x13 pan with Pam. Bake thawed hash browns with melted butter poured over at 425 deg for 25 minutes. Layer cheese and meat over potatoes. Beat eggs and milk together, add in green chilies. Pour over all. Bake at 350 degrees for 30 min.

  1. I think I will make the latter of the two using frozen potatoes O'Brien (thawed)! Sounds absolutely delishioso!
